Adding a useful alt text description can help SEO and this shouldn’t be done at the expense of readability and accessibility (which you acknowledge and I’m emphasizing).
Honestly hadn't considered alt text as an SEO lever at all, just accessibility — good reminder that they're not separate jobs. Renaming files before upload is the part I'll actually change, since alt text is easy to forget in the moment but a good filename takes no extra time.

Oh, I didn’t even know Substack offered unsplash images.
But you can easily check if there is alt text by clicking the 3 dots and seeing if the field is empty.
